Tone It Up Pumpkin Muffins

I made the Tone It Up Pumpkin Muffins the other day and I forgot how delicious they are. I bought the new Tone It Up mini muffin pan from Target and couldn’t wait to use it. Do you see the little hearts?

Here’s the recipe.

makes 12 muffins (serving size is 1 muffin)


  • 1 1/2cups rolled oats
  • 1cup pumpkin puree
  • 1/4cup unsweetened apple sauce
  • 1Tbsp vanilla extract
  • 2Tbsp melted coconut oil
  • 1/4cup unsweetened almond milk
  • 1/4cup pure maple syrup
  • 1tsp baking powder
  • 1/2tsp baking soda
  • 1/4tsp salt
  • 1tsp cinnamon
  • coconut oil spray


STEP 1: Preheat the oven to 350. Lightly spray a muffin pan with cooking spray. (Tip: use cupcake liners to take these on the go!)

STEP 2: Combine all ingredients in a food processor and mix until well combined. Pour into greased muffin tins and bake for 15 minutes. 

STEP 3: Recipe makes 10-12 muffins, so these are perfect for meal prep! Serving size is 2 muffins.

Happy Monday

Hi everyone!

Happy Monday! I slept until 11am today because I’m just not feeling well! I head to New York City tommorow to Sloan Kettering so they can do bloodwork on me to make sure everything is ok. I spent most of the day prepping for the Tone It Up 5 day detox. It’s free if you’re interested. I took my before pictures for the Love Your Body challenge and tab to Staples to buy a printer. Then I spent way to much time printing and binding the challenge books and the day got away from me. Needless to say I never got a workout in. Hopefully I can get one in tommorow if we don’t get held up at the hospital too long.

Today was definitely a hat, sweatshirt and sweatpants kind of day. These Chenille pants are so comfortable and on major sale! (Click on the images to shop!)
